Cullen Skink

A speciality from the town of Cullen on Scotlands north-east coast, Cullen skink is a thick soup made from haddock, poatoes and onions. Theories as to where the word "skink" comes from differ: it may be a variation on the Scots skink, meaning soup made from shin of beef. See also Scottish.
