The best way to explain it is comparing it to turkey lunch meat that you put on sandwiches. When it's cold you have a different taste or what seems like a different taste, but when heated its taste completely changes. Similar with water, although it's just a small difference. The major influencer of taste are minerals and ph levels, but taste is a smaller factor.
